Tim I may have missed it are you using the RV 727 or a different big block 727. If it’s the RV 727 you might want to switch out the governor weights in the tail shaft, those RV governor weights are heavy and really would shift to early IMO. Cheap an easy fix with the trans out, throw in some lighter ones to raise the shift points up for drag practicality. Something to think about I used a RV trans behind my 360 after a rebuild and trans go 2 shift kit and could not figure out why it shifted so early thinking it was my linkage I adjusted back and forth a thousand times. Turns out it was the governor weights.

It's a car 727
 
One good thing about heavy governor weights is they give positive manual control of up-shifts. Works really if you set the throttle valve linkage of the transmission to fully rearward at full throttle. Upshifting right when the engine stops pulling works is a good thing!
