How long do ceramic coated headers last, before they start looking like crap and need re-coating.

A lot depends on The amount of adverse weather your driving in.
If you drive only in nice weather, years.
Driving in all weather like I did in my everyday driver. A couple of years. (3)

I have TTI ceramic coated headers for well over 8 years and they hold up nicely. I polish them routinely w/mothers mag wheel polish. TTI also recommends to lay a plastic vapor barrier on the garage floor in the cold winter months to protect the moisture from the concrete attacking the coating since they are close to the concrete floor. Been doin that ever since they were installed.

Mine look brand new all the time because I seldom drive the car and the sits in a closed shop with epoxy flooring. It depends how much you drive the car, where the car is parked most of the time and how you take care of the headers themselves.
