I am currently running an early 80's Holley Street Dominator intake in my 1970 "340" motor. It runs well and I rarely drive the car. Mostly for cruising and 1/8 mile drag racing. I shift at 5800 rpm, run the purple stripe Hemi grind cam, have 3:91 gears a 750 double pumper carb, MSD electronics, Flowmaster exhaust with 2 1/2" pipes, and 3,000 rpm stall converter in a 904 trans. The car weighs 3,600 lbs with me in it. I was wondering if I will see much improvment performance wise with a change to the Edelbrock RPM Air Gap intake. If so how much and at what rpm. Or perhaps is there is a better choice out there for an intake besides the the Air Gap?

The Air Gap is probably the best street strip intake out for small blocks. You will probably pick up a good amount of torque on t he low end with out loosing much if anything on top over the single plane Holley. It will also improve the signal threw the carb and improve idle quality and throttle response.
