Chilli recipies

I usually cut up some steak into small cubes (the longest part), dice up some green pepper, dice up some onion, salt / pepper, a little Garlic powder,1 small can of Hunt's tomoto sauce, 1 can of Bush's Texas chilli starter, 1 can Bush's Mexican chilli starter, 2 cans of red Kidney Beans, and a small sprinkle of cheddar cheese.
 
The best chili recipe is mine!!!!!

....and I ain't tellin!! LOL!!!

But it involves fresh tomatoes, onions, bell peppers, dark and light kidney beans, ground beef(and other meat products that shall remain un-named), tomato paste, tomato soup, and a variety of other ingredients that add flavor and a little kick to it.

really...really good freakin' chili :



1lb ground beef (brown it and season it with the listed spices below while cooking it)


2 large cans crushed tomatoes
1 small can diced tomatoes
1 can corn
1 can black beans
1 can kidney beans
1 red onion - diced or minced
1 half bulb (at least) fresh garlic minced
1 red onion chopped
2 large jalapeños- minced


Spices---

start with this-
2 tbs black pepper
2 tbs sugar
2tbs cumin
2tbs chili powder
2tbs red pepper flakes
2tbs Goya Adobo spice ( you wont need salt , this has plenty in it)


cook it in the pot for 10 minutes over medium heat.

Then start tasting----- add cumin / Adobo / pepper to taste . Cook for at least another 10 minutes.
 
I don't use anything out of a can when I want to make a good batch. I will grind up a lower cut of steak instead of using burger and everything else that goes in it will be fresh and the tomatoe base will be done from homegrown ones. Not the ones that come from the store that taste like wax. We do up a lot of tomatoes in jars near the end of harvest and it serves us well in the cold months when I make a lot of chili. I usually start my chili on friday after work so it's ready by sundays afternoon NFL games. I also don't use chili powder. I grew some peppers called ring of fire peppers back in 99, and one or two of those (I have them in a freezer bag) will heat up a gallon or two of chili and taste waaaaayyyyyy better than using powder. I ain't giving up any more secrets though.:tongue:
 
I hardly ever follow a recipe when making chili. Just never know what I might get. Sometimes it doesn't all get eaten, I suppose it wasn't that good then.

Those Texans...don't like beans in their chili! They're just filler anywho, for us cheap folks who don't grow steak in the backyard!

wife is at work so here goes.

Green Chilli
ingredients:
two to four strips of bacon
one pound of pork tenderloin diced into bite size chunks
one dozen roasted chile peppers diced with or without seeds and skins removed. use NM chiles if you like hot or anaheims for the wusses. we buy our peppers from the vendors in the fall and freeze them in two quart size bags for use whenever we want.
1 tsp salt
2 tsp cumin
1 tblsp black pepper
1 clove garlic crushed
1 large vidalia onion diced

dice up bacon and fry it in a large pot
add the pork and brown it
add the onions, garlic and spices and simmer til the onions turn clear.
add the chiles and cover with water and simmer as long as you can 3-4 hours minimum. check for enough water and stir about every half hour.
You can do the simmering in a crock pot, but it doesn't taste as good to me.
I add more salt and cumin if the wife ain't looking.
 

For the meat, I like 1 pound of deer, 1 pound of pork sausage, 1 pound of beef and 2 chopped chicken breast.

Friend of mine was using a needle and thread to hang peppers up to dry. He was threading up Habaneros, jalapenos, and Chile peppers. He was doing a real good job until he reached up and scratched his eye. OOOOOHHH BOOOY! He said he thought that he was really going to die!

I'm to give my mom a call right now and let take note of these... she likes recipes. Thanks!
