Displacement ?

A co worker has a 318 with a 340 crankshaft installed that I can
buy cheap. What is the difference of the 318 with stock crank and
with a 340 crank?

nothing. its still a 318. they are the same stroke.

Yep, same stroke unless he had the rod journals offset ground.
