dual carb setup

I purchased a 64 valiant v100 a while back. The 225 motor has been totally redone with .30 over and a mild cam. It has an offenhauser dual carb intake with two 1-barrels. The car has amazing torque and runs really well. Drove it to the Charlotte show this past weekend - did really well on the 400 mile roundtrip. My question involves the dual carbs - why is the single carb offenhauser preferred over the duals? I am really impressed with this car and was just curious as to why a single 2 or 4bbl would be preferred. My car has the original column mounted three speed.
 
I think it is harder to set up 2 carbs over a single 4 barrel. Dual carbs sure look better, and with 2 small 1 barrel carbs you should still have great bottom end torque.
Have any pics of your setup? I'd live to see em!
 
Did this to Hester with a twist. The twist was 2 Carter/Weber progressive 2 barrels from an Escort. Effectively gives me a 350 CFM double pumper with electric choke. Right now the carbs are mounted with adapters but there is enough meat in the carb mount bosses to mill and drill for the Carter/Weber pattern. Kinda like the plenum volume of the adapters though.
Anyway, I got the carbs, adapters, linkage, and air cleaners from stoveboltengineering.com. Not too difficult to set up and a snap with a Unisyn. The synch on the carbs is not that critical because of the crossover in the manifold from plenum to plenum. Adjustment that would have a Ferrari spitting like a wet cat is fine for this setup. Really wakes the old slant up and has good throttle response. Can't wait to get a good exhaust so she can poop as well as she can eat.
 
thanks - mine has the Clifford headers and exhaust leaving behind the driver's door - when I can figure out how to post pictures, I will. Best description of the engine sound - "sounds like an angry Cessna".
