Alternators come in different designs which can affect the output curve, ie more or less output at low speeds.
Also, changing pulley size will change the curve. If you want more output at lower speeds, use a smaller pulley. But that also raises the shaft speed. So the max safe speed should be checked against the expected maximum engine rpm.
Alternators take some power to run them. Not much, but some. Bigger alt, more power to run it. So it is silly to use an alt that has a higher output than is reqd for the electrical system.
