Agree with ditching the elec fuel pump.
Put on a nice (Carter) mechanical pump.
That's all you will need.

Another note: Ede carbs are famous for the floats being off from the factory.
Adjusting the floats is simple and VERY important for the carb to function properly.
While you have the top off the carb to adjust the floats,blow out the needle & seat with compressed air.
Making sure there is no dirt or debris stopping the needle from sealing.
All you need to do is take the top off the carb,which can be done in minutes.
Simple stuff.

If you don't have the Edelbrock manual,you can look it up online.

YouTube also how some very good Edelbrock "how to" tech tips, for adjusting idle,air/fuel, ect.

Sounds like your getting closer....Keep the faith !

OK... MUCH better!!!

Found someone local who had a spare Eddy 600 (same exact carb I have on the car) he was willing to let me use for testing purposes... blew it out with some air, bolted in on, let the pump fill it up, ... and VOILA!!!!

Holy crap what a freakin difference!! 750rpm, 16in of vacuum - steady. Something is obviously wrong with my carb... no doubt
 

Cool. Sounds good. Pull it in gear and make sure it's not laboring. If it is, turn the idle up a bit, maybe 50-100 rpm.

Watch out for that fuel blow over if you still have the higher fuel pressure. Check the floats on your old carb and maybe adjust them down or make sure they aren't saturated.
 
she's getting there LOL, I just switched my intake manifold out and with the new manifold installed my vacuum gauge was fluctuating a bit at idle (just like yours was doing, hunting a bit). Turned out the idle screws needed some adjustments after I checked the initial and total timing. Made a big difference.

Is there a difference in the idle screw position between this new carb and the old one? Also, did you end up limiting the fuel pressure to 5-5.5 psi?
 
Update - got a new mechanical fuel pump, hooked it up and am running STEADY at 5 psi :)
