I am swapping a 5.9 magnum into a 71 Dart, going to use LA style headers. Should I buy gaskets for the magnum or LA?

Beware that not all headers will seal.
better quality headers have more precise port shape and the ports can be slightly bigger so make sure to confirm seal before installing.
Use a gasket to compare the header flange to the cylinder head ports.

I love the Remflex gaskets. They seal very well. The only drawback is that 99 times outta 100 they tear up on disassembly. I may try some copper gaskets this next time IF I can find some for a slant 6.

So Remflex has different gaskets for the LA and the Magnum. I am going to be running the magnum engine with LA headers. Is there a certain combo that works better? Or does it matter?

I'm using a set of headman headers on 67 Barracuda, they were made before Magnum engines existed and fit just fine, verified ports would match fit with reflex gasket
