Focus on the low speed circuits first. With a modified engine it will be very helpful to learn a bit about how the carburetor works and the circuits used to accomplish it. Basically carburetors use two main principles to provide a metered fuel; one based on manifold vacuum when the throttle is closed or nearly closed (idle and low speed cruising) and velocity through the venturi when the throttle is partly open to wide open.
Urich and Fisher's Holley Carburetors and Manifolds (HP Books) provides solid explanation of how the carburetor circuits work. A used copy is just as good as a new copy. On-line, Chrysler's MTSC series has several pamphlets covering carburetor fundementals, although most were oriented more toward the Carters, the basic principles are the same for all of these carbs. Keep in mind that fluid dynamics is complex especially when air is being mixed into the fuel so sometimes changes cause a different effect than expected! That's the bottom line on why they suggest placing the idle restriction low, and using 'old school' holley emulsion holes.
