How loud are these units...1 being a stock roller timing chain (in good shape) and 5 being a loud gear drive. Thanks

This is a little subjective but I will say that they are quieter than other mnfr's setups because of the timing cover on small block Mopars. They are not excessive at all (IMHO).
 
I would say about a 2.5. you can barely hear this under a Mopar cover as stated as the gears are very good. Rougher PJ style on a RB is noticeable, as they rock a little due to dual idlers. The noisy ones are actually noiser! These are the good ones.
 
I run one on my duster, and it's not very loud, ( the timing cover muffles it a lot) but you can hear it a little at low RPM. I love gear drives as the timing is always accurate. After having one I'll never build another engine with a chain...
 
This gear drive also gives you an accurate way to do a COP or sequential EFI as you have a rock solid cam (1/2 crank speed) sensor mechanism. Try that with a chain....bump.
