Thermostat temperatures

I am sure this has been answered before but I couldn't locate it. I need a new thermostat, but am unsure which temp I need. The engine is a /6 and 3 different temps are available. 160, 180 and 192. Could someone please educate me on the criteria for selecting one temp over another? It doesn't seem like it should have to be this difficult, lol.

160* is too cold in my opinion.
180* is what I use. Feel the engine runs best at that temp, warm enough to let things run right. But on cool days I run 165*-170* with the 180* stat
195* is a little too warm for me, but is probably the factory replacement. Better for cooler climates, good for stock engines and and actually best engine longevity. At least thats what they say about temp and cylinder wear.
