Your current recipe of uppity cam, high stall converter, and 3.91 gears is much better suited for drag racing. If you change to a taller rear gear, that cam and converter will need to be changed to match it in order to get better fuel economy, and any reasonable drivability. You may even want to consider a vacuum secondary operated carburetor as well.

One can purchase a lot of fuel for the price of rebuilding a drive train, and performing the engine modifications need to convert your car into a more efficient highway cruiser.
 
I'll jump in here.
I would go with a 3:54 geared Dana 60.
Why?
The car is mainly for looks, and nothing looks better than a Dana under the back end of a Mopar.
The car obviously isn't built for economy and driveability anyway with the 509 cam etc, so why don't you just leave it as is or put a Dana 60 under it?
You'll never break it, and it looks cool.
That is literally what i am doing, as a matter of fact.
