what size cam to use

I would go with a Comp XE262H
Should work well with your combo. Look it up.

A cam with the intake duration between 212-&-218 w/approx 8*'s more duration on the exhaust side or better since your using exhaust manifolds.

Be conservative on the cam with a near stock motor.

Knowing your gear ratio would be helpful also.​

Most name brand cam manufactures like comp,crane,hughes and lunati should have ones that work with stock converters also.

The stock 340 cam should be a nice upgrade. Been done lots of times. That's what my tired ol 318 has in it - worked good, but my engine is now pretty well worn out & tired.
