I have a 185 thermostat in my 340. It stays right about there most of the time. Do I need to go up to a 195 or is 185 good enough for operating temp?

I'd say your good. I run an 180 t stat.
I don't think I have seen a 185°. 180 or 195. 180° is my favorite.

warmer..195 may burn cleaner and more efficient but it worries a lot of guys.
In my 340-4speed with factory rad, factory clutch fan and fan shield- I run a 180 and she stays consistent cool even on the hottest days. 3.91 rear gears. So she is screaming most times. Lol!

Looks like 190 was standard except for 318-383 2bbl.
