Look at the wages and benefits that the UAW gets and then ask the same question.
As far as limited options go, imagine that if they sell only 1 Sebring with a manual trans, they have to run a 50,000 (maybe 100,000 mile) mile EPA test on it.
Look at just how many different wiring harness combos there are for each vehicle. A/C, radios, power windows, locks,etc.
 
Today's cars are designed and built mostly to government mandated standards limiting what can be built. Has to meet certain milage standards, safety standards, emission standards, etc. etc.

Now think about this, the same people want to bring you your healthcare. As with cars, one size (little) fits all.
