Who Make's There Own Beef Jerky?

Does any body want to share their recipes?
I am going to stick with dry rubs and I am trying to get close to a brand called Uncle Mikes from up in Amish country. It is the best I have ever had.
Here's what I have so far:
salt
paprika
onion powder
garlic powder
black pepper
cheyenne pepper powder
I am still working the mix of each.
Meat is whatever I can get for under $2.50 a lb. Preferably cut into steaks.
Put meat in freezer to slightly harden but not so hard you can't cut.
Cut steaks into 1/8" thick strips.
Mix/rub the rub in thoroughly.
Refridgerate for 24+ hours.
I do mine mostly on the dehydrator but have also done it on the grill.
Join in, even if its of a good brand you know of.
Here's my favorite, Uncle Mikes.

And this is mine. Meat was $2.29 lb, you lose some weight when but not that much. It all depends on how dry you like it. The dryer it is the longer it will keep. I like to leave the little pieces of fat on there. There like candy when warm. =P~

My brother does and his recipe is a lot like yours only with a lot of crushed red pepper flakes on it too. that stuff is perfect with an ice cold Miller High Life!!!
 
I do quite a bit of deer jerky.
I've got 3 dryers.
Uncle Mike's is the best you can buy!

Never had deer jerkey longarm. Had a friend up in PA who would make deer bologna.
I had some caribu jerkey at our local Ribfeast a few years back, good stuff.
Any good rubs?
I am close to the ingrediants of Mikes but don't the the quantities of each down. I might have to buy another bag and try and figure it out. =P~

We have a Liquor store that keeps a big jar of Deer Jerky here and the man lives close by, I will find out the name brand , But it is great, :-D
Better than the stuff you see in the stores.
Know I have a go to guy when I make some :cheers:
 
That stuff eats like candy but is priced like gold!! Good idea making it yourself. I may have to go borrow Mom's dehydrator.
 
O.K guys for all you wanta be cooks out there. I deal with a guy in a little town in Arkansas. He supplies all the spices for Ceasars Palace and many, many butcher shops across the U.S and also several hunting base camps. You can buy this stuff for seasoning Jerky as well as several other spices in bulk. They are fresh and cheap and he sells the stuff by the pound. Compared to Wally World on prices you will be amazed. Just for an example he has Jerky seasoning for $4.50 a lb. Seasoning for 25 lbs of Bratwurst is $5.50. Its already mixed and all you do is add it to your ground meat. This is some good stuff. 1 gal. of liquid smoke is $9.80. On the spices he sells it by the pound or the ounce. Cheap but VERY high quality stuff. I buy my kitchen spices there and store em in the freeze till i need to replenish my usin jar. He has the sausage making kits for summer sausage. If it has to do with spices or butcher supplies, he has it and will send UPS to your door. Good honest guy with good pruducts. You can thank me later. Let me know if you use him. He's there on Sundays getting orders ready to go out in the morning. I usually ride the bike down on Sunday and always find him there. You can haul a lot of spices on a Gold Wing and it's the best smellin bike on the road. And he does take credit cards and there is a 2 oz minimum.

I get some up at the little china mart that comes in real thin sheet's that is loaded with red pepper flake's, and your right DartGuy, ice cold brew is needed. =P~

This was one of those necessity thing's memike. I could live on this stuff. But I can't afford the retail price. Great when out fishing.
You probably have it in you blood allready, didn't you say you are part Cherokee?

I'm not to sure about the tounge. Never had it in my life. I have made slim jim's with ground beef. Thank's for sharing.
 
The droewors is amazing as the sausage skin is hard and then it's meaty inside. You guys should try to make some, not so difficult. You will be surprised!
