Stainless. The actual blade part may have some aluminum pieces but the arm itself should be stainless. The part (knuckle) with the splines is either steel or aluminum.

thanks guys. if i was wearing socks at home, there's something very very wrong...
i was thinking of using the metal polish i used on the bare parts of the grill on them, but if they're anodized, i don't want to screw that up. but the more i'm looking at them, the more i think i'll leave them as is -
