You can find the dimensions of most common tires on Summit's web site by looking them up as if you are going to buy them, and then look on the tires description info.

I run that size Nitto Drag Radials on my '68. They are 28" tall. Excellent daily driver tires.
 
If you can't find it on a chart, take a piece of twine, wrap it around the tire, carefully mark it where it comes together, get your tape measure out and measure what you wrapped around the tire. Now you can get all twisted up trying to remember High School Geometry....

Circumference is equal to pi times Diameter (pi is equal to 3.1415) you've got Circumference, that is the measurement of twine, Diameter is gonna be: circumference divided by pi

They never told us in school that math would be good for working on cars......
 
The best answer is, it depends on who makes it. Tires vary in height from one maker to another. They shouldn't, but they do. I have seen 275 60s vary from just under 28" to almost 29". The only way to know for sure is to go on the manufacturer's web site.......or a site like Tire Rack, and look up the tire height for a particular size in a particular brand, because each brand can be different for each size.
 
27.99" by my calculator. This will work for any size tire:
((Section width x Aspect Ratio)÷1270)+Wheel diameter = Tire diameter, or
((275x60)÷1270)+15 = 27.99"
