I am considering looking for a junkyard 360 for my budget bracket Dart (no street driving). I'll be replacing a really tired '74 360. Except for using my intake, headers, and distributor, plug and play would be ideal. What would be the best year(s) to look for?

usually pre 73 have thicker mains. But I've seen the bores all over the place.

While that may be true, any year 360 is a fine one for a budget bracket racer. I'd consider a few things while looking;

Low miles
A Pre-Magnum engine for the roller cam
A Magnum engine, though you can not oil through the block.
Newer engines have a slightly higher piston height which can help out some. Bring a mic/dial caliper and a flat edge to measure the piston depth if possible. (Head comes off)

If you can hear it run, great!
If not, the gamble is on.
