Swapped 7.1/4 with 8.3/4 in my 1969 dart and now finding that the backing plates are different . Come to find out the 7.1/4 is not original and came with 10x2.5 drum brakes and was told backing plates should work. With that being said I have purchased new drums, shoes etc for 10x1.75 and now have a gap between plate and drum. So now I'm looking plates with the proper offset. Also the 7.1/4 is large bolt pattern and will have the small pattern to match the front. Anyone with any information would be appreciated.

You need early a body 8.75" backing plates which are different. Years 1966-1972. They are sometimes difficult to find. I sold my last set two years ago. People who have recently upgraded to large bolt pattern axles may hopefully have so. For you.
make sure you get the spreader bars with them

You need to start by posting photos or you're going to end up with more useless parts.

Something to note...

There was a change in the hardware around 69.

My recommendation is to look for hardware based on 69. The 10x1.75 backing plates will work with either, but the 69 has tabs to prevent the cylinder pistons from popping out when installing the hardware.

1 is 68 and older (no tabs)

3 is 69 and newer (with tabs)
