brisket recipie and cooking tips

Good tips here. I usually smoke a ham and tried a brisket one time. Screwed it up and was hard as a rock. I have since learned the correct way and will try again soon.
 
try to get an untrimed brisket. It'll have a nice layer of fat on top. It'll give the brisket nice flavor and keep it juicy.
 
and, if ya like bacon (who doesn't ??) and you have a nice fat-cap, carefully make a pocket under it with a sharp knife, you want to see nothing but meat at teh bottom of the pocket, insert thick cut bacon and some sweet onion, . Don't use so much that the fat cap won't sit closed down. Smoke away. When all done and rested, dispose of bacon and onion, it's done it's job. Enjoy :)
