I've got a 360 with a mild cam 30 overbore pistons along with 340J heads, now my question is what would be the best carb to use? I should also mention compression ratio is close to 11:1. Any help would be great thanks.

I,m running a 750 holley with v.s on my stroked 340(372)452hp with x heads P/P,rpm airgap with headders. When my engine was dynoed the builder(old mopar racer)recommended the 750v.s for best performance.Oh ya my cam is XE284H.All in front of a 4 speed.

Your engine description is very vauge and leaves out intended useage.

In general, I agree, a 750 will cover 90% of all applications.
