Can anyone tell me the height difference between a stock 1970 340 intake and a mopar performance m1 single plane?.

A MP/M1 single plane is approximately 5-1/2 tall as it sits on a block. This doesn’t take into account the extra height it has as it sits on the heads which is in the area of 3/16 +/- 1/4.
I don’t have a ‘70 intake but FWIW, this ‘73 TQ intake works out to be approximately 4-3/4, same as above, resting on the block. I do not know if there’s a height difference between the Thermo Quad intake manifold and the regular square bore Carter intake manifold.
I know this leaves some missing height, it that’s all I got. Sorry I can not be of more help at the moment.
