It depends on what you want to do with the car. If it is a rare car, you might want to consider correct seats and carpet. If you want to customize it with more comfortable modern seats, you can scrounge them in junk yards or the internet, but be prepared to do some fabrication. You can score carpets from a number of suppliers, such as Legendary or ACC.

Plenty of guys on the site have gone in either direction.
