I had a guy tell me yesterday that we could add about 20-30 more hosrepower if we scrapped our Edelbrock 750 and put on a Holley 650 ,what do you guys think ?

Probably not.

If you had a basically stock 318 then you might get better throttle response with a smaller carb, but probably not any more power. This is assuming that both carbs are jetted correctly for your engine.

A good friend of mine took over a second off his ET by swapping from a Holley 600 to an Edelbrock 750 on his 327.

XS2 . i will not run a 750 eddy carb again. i had issues with the last two i ran. the 1406, no problems at all. i pulled the 750 off my 360 and slapped on a holley 600 and never looked back. even the 750 DP i put on the 360 ran way better. this is a mild 360 thats never seen track time.
 
On a stock engine you might want to leave it alone. If it's modified, I like holleys because they are easy to work on and you can get anything for them.
 
I'm a fan of Holley's and a few others, but unless that 750 is total junk, you wont gain 20-30 hp.
 
I have never had a good working eddy carb other than basic street/stock combo and the still had a couple had problems. Not sure bout 20-30 hp but a Holley is all you will find on our cars. They take more time to tune but well worth it.
