my manual brake experience

-
I will add my 2 cents, I have built many of these old cars over the decades, most came with manual drum brakes, I have never had any trouble don't them in manual drum or disc and any trouble stopping. Like said, the right parts work fine. There is difference in bore of MC wheel cylinders the rod, types of pads, relation of shoes to drums, set up, adjusting, etc.

I wonder what I done wrong bolting on a master, I’m thinking bad master or wrong bore. It doesn’t matter I’ve went back to power and the pedal is good
Just set your car up the way you like it. It only has to please you.

Avatar car (72 Demon) has manual single piston discs. Love it - very linear feel to the pedal. Stops very well when asked to.

Something must be off on your setup. I have ran a 1 1/16" master with disc/drum and with a disc/disc setup. I now run a 15/16" master with disc/disc and it stops just fine. I get close to 1400psi at each caliper and it doesn't take much pedal effort.
