Need to change jets. How do the bowls separate from the fuel rail?

The Holleys built like that have "O" rings on the ends of those tubes, with a ridge on the tube to retain them. When reinstalling, make sure they are "supple" and perhaps add a small smear of just about any oil (engine oil) or light grease

I know nothing of QuickFuel. Isn't there a website with illustrations/ destructions etc?

Same as the Holley. Remove the float bowl screws and pull the bowls off. They have rubber boot seals on the ends of the transfer tube.
