So a guy today told me if I run no thermostat it will keep my car cooler is that true?

Is there pros and cons to this method
 
Don't listen to that guy. If your car won't stay cool with a 180 stat, you have other cooling problems.

No Stat:

Pro... None.

Con... Longer worm up. No regulation of minimum operating temperature. Shortens engine life.

(And to clarify the "Shortens engine life." comment. We are talking long term here. For example, an engine that lasted 115,000 miles, without a thermostat, before needing a rebuild, may have lasted 190,000 with a thermostat.)

Thermostats regulate MINIMUM operating temperature, not maximum temperature.
 
If tossing the thermostat in the ditch keeps your car cooler, you have other issues making it over heat.
