Do you do it in one single sweep to desired value, or in increments?
 
I use a torque wrench and you do it in a smooth pull to the final spec. With stretch I think it's less important how you reach it, as long as the length is right.
 
I just torque them to spec and let her rip.

Dial, "click", or beam?
 
Snap On click-type I've had for decades. I get it checked every 5 years or so. Also have an even older SK beam type but the Snap On is longer and I can be smoother with it.
