single vs dual quad

Wondering what improvement (if any) Id see using a dual quad Offy intake and two 500AFB carbs over my current LD340 and Thermoquad?

Heads are ported 360 587s and engine is to be a 318/390 cui stroker.

I realise the Offy has a smaller port...so with this in mind Id be interested in which would work betetr and why?

Probably not gonna be better with that dual offy over the LD and single 4 brl.
