Switching from foot brake 727 to power glide with brake

Launching at a lower RPM may actually help the 60Ft times. If the torque converter is good, it will give the engine a run at the stall point and load it all a little harder. if the converter isn't up to the task, it won't help much. My old car had about the same power as yours and it thrived with as much starting line gear ratio, as I could give it. I'm talking big super stock wheel stands and consistent 1.46 60ft times, at 10.75 ET's, at 3350 pounds.
