Agree with the above post. The only issue is that sometimes exhaust manifolds can warp over time. I had my manifolds surface to remove high or low areas before reassembly.

On my 1970 Duster 340, there was no exhaust manifild gasket on the passenger side. The driver's side had the heat shield/ gasket.

There should be 2 small gaskets used with the adapter. One is thinner than the other.

The flexplate should only fit one way. Are you sure that it is positioned correctly? Did you try turning the plate on the converter in different locations?

Are you putting sealer on the intake bolts? Oil will pool in the intake valleys if you don't.

I was thinking exactly what RedFish said. We pulled the intake on my 340 years ago and didn't put sealant on the manifold bolts. My engine always had a puddle in those nooks and crannies.
