A 340 with a 4" crank and a 4.07" (.030 over) bore is 416". How big depends on what crank and bore you use. It's easy to figure, bore X bore X stroke X .7854 X the number of cylinders.
 
So what do you end up with using that same crank in a 340 block? How do people get up to 416 and is that the biggest ci size that can be made using an LA SB?

I think the biggest that's been done often and run and proven. Is 440. Out of a R3 block. A 476CI build is mentioned in "How to hot rod small block mopars". I've heard of a few guys doing it. But haven't seen it yet myself. I think it's something that high end one off engine shops are doing to prove they can.
 
There are several in the 420-450" range on Moparts. Ron Silva built a 501 or 502" several years ago.

You can also take the .030 over 340 (4.07) and stick a 4.125 stroker crank and end up with 427" or the 4.25 crank in the same block for Aprox 440".

422 is the 4" stroke with a 4.10 bore. (340 +.060 over) You can fit a longer stroke in a factory block but do your homework.

4.04 cherry bore 340 makes a 410 with a 4" crank. (or .040 over 360) 416 is typically a 4.07 bore.

Close to 4" bore about every .010 should increase displacement around 2ci. Decent estimation anyway.
