I noticed today that the passenger side valve cover breather is smoking after a good drive. I did add a baffled breather to the second vent next to the master cylinder on driver side. Three breathers in total. Is this too much? What other info is needed to narrow down a solution?

I don't see a PCV valve... could be your problem.
How about this set up? breather on passenger side cover, filler cap on front driver side cover, PCV valve on rear driver side cover connected to carb. Forgive my ignorance here since this is all a new learning experience for me but do I have to adjust the carb in anyway if I connect the PCV? Anything else to consider here?
Baffles aren't there to keep it from smoking. What you need is a COMPLETE PCV system. See the diagram below. You need a SEALED breather with a hose nipple for a hose that connects to the air cleaner. The PCV valve needs to be in the opposite valve cover from the breather.

Possibly, but most likely not. Just hook it up and go. If you do have to futz with the idle speed or mixture, it will be very minor.

A pcv on one side, and a baffled breather on the other side should be all you need. That is why I don't run aftermarket valve covers. Other than that, you are getting too much blowby past the rings.

Probably not. When I bought my Swinger, i noticed that it had oil leaking at the valve covers and distributor base, then noticed that it didnt have a pcv valve installed. So I put new valve covers on, and plumbed in a pcv valve and low and behold, the leaks stopped due to lower pressure inside the motor, and it made no difference to the way my engine ran. BTW, Im only running a pcv valve from valve cover to carb base, I dont have a breather from the other valve cover to air cleaner, but I do have a vented oil filler cap, same system as what @66fs mentioned.

Adding a PCV to an engine previously tuned for no pcv, should change the idle speed and usually the idle quality, unless the Throttle opening is already out to lunch, or if the manifold vacuum is really low..
Just fix it like the diagram I posted outlines and it'll be good.

So what changes if you have a pie tin open air cleaner assembly? Can add a PCV to carb, so just a vented filler cap?

Yes, that'll be fine.
That's how the factory plumbed it if it wasn't equipped with CAP (clean air package).
Why would anything change? You still route a hose from the sealed valve cover breather to the air cleaner base. If you use a vented breather, you will get oil puke and vapor residue on your valve cover, instead of directing it to the air cleaner to be burned through the engine. One way is right. One is wrong.
