But the extra 2" width with the same offset would pull the sidewalls to the outside by 1"!

Wider rims are also good for drag racing. Many Stock class racers run 10" rims with 9" slicks. It allows you to run a little more air pressure while maintaining a flatter, wider footprint and reducing the amount of "wrinkle" in the sidewalls, which helps sidewall life and car stability.
