I took the liberty of attempting to decipher your cam specs. here is what I came up with;
276/288/114LSA, in at 109 which is +5 The .050 numbers are 218/228
This puts the Ica at 67*ABDC
In full form I get
276intake/113compression/97Power/288exhaust and 54* overlap
oops I guess I should have updated my screen, lol.

In an 8/1 engine at sealevel, this looks like a Dcr of 6.28 and cranks ~119psi
In a True 10/1 engine; 7.79Dcr/158psi

The 600AVS will be just fine on it.

Check that at idle, in gear, the met rod pistons stay down. Easy 5 min check: loosen piston covers slightly, swivel to one side & re-tighten so that pistons are captive but you see can them. Then to above check.
 
Stock 273, 2 barrel motors were rated 8.8 to 1 from the factory. Not exactly low compression by todays standard. A head gasket change could easily get the motor to 9 to 1 which would be perfect for a street motor. Aside from the valve train issue where did the carb come from? Edelbrock, Carter 9636, stock 273? Been my experience with 273s that the Edelbrock 600 out of the box is pretty much right on as far as a baseline. FWIW I’m running a Carter 9636 on a 273 with the stock CR, stock cam, Edelbrock Performer, Electronic ignition and the Commando single exhaust. It by no means is a stump puller but it does have a little gittyup.
