I'm running a Holley 600 that I snagged on ebay for $40. A $25 Trick Kit and some cleaning/assembly later, it runs like a top. I ran Quadrajets on most of my Brand X stuff and never had problems despite the innumerable horror stories about them. I think most of the negatives about any carb are based on a lack of familiarity and/or patience in tuning.

The Edelbrock carb will most likely give you better gas mileage. On a milder street engine like yours that Eddy will do fine as long as it's adjusted and jetted properly.

Also, put a check valve in the booster hose; it will keep vacuum in. when you rev.
