Should I be greasing my U joints?

A- would only grease one of the four bearing areas and

B- I don't think there's enough clearance between the cap and the bearing surface for the threads.

If the u-joints aren't bad, grease them up and call it good. We're talking about a '74 slant 6, right? Don't overcomplicate this. U-joints last a LONG time.

It amazes me how people overthink things like this.
When you lube your front end, put a couple of shots in each u-joint zerk and call it done.
It's not like you have a 1000 h.p. race car here...

I do not use greasable u-joints any longer, twisted one off back in the '70's. For a low horsepower application, should be fine. When to grease? Once a year or so. When do you stop inserting grease with a grease gun? You will hear an audible crackle sound, stop. Going further will just push grease past the seals.
