hey guys i just dug my electric smoker out and i got a couple racks of pork ribs just wondering if anyone has a few tips and recipes i never smoked meat before but i smoke a lot of fish mostley mackeral and herring yum maybe memike might give up a few secrets or anyone else?
 
Look up the 3-2-1 method. I just make a good rub and let it melt into the meat overnight. Make sure you keep the heat down and let it slow cook like it should. The racks will be so soft you have to use a couple of spatula's to get them off the smoker. I like apple wood for the smoke. A little sweet and spicy with the rub. I also peel the membranes to let the heat into the meat from both sides.
 
Cut the back bone off.Score the membrane lightly on the underside.Go to web or store and make up or buy some dry rub to your liking.Use hickory with a little oak.Bring smoker up to 230.Smoke for 4 to 4.5 hours.Lift lid as little as possible to keep from letting smoke out.I do this for a living.www.rivertownebbq.com Kevin

Carolina BBQ Rub

2 tablespoons brown sugar
2 tablespoons ground cumin
2 tablespoons chili powder
2 tablespoons freshly ground black pepper
1 tablespoon cayenne pepper
1/4 cup paprika

Kansas City Rib Rub

1 tablespoon black pepper
1 tablespoon salt
1 tablespoon chili powder
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon cayenne

Memphis Style Rib Rub

1/4 cup paprika
2 tablespoons salt
2 tablespoons onion powder
2 tablespoons fresh ground black pepper
1 tablespoon cayenne
 
Any one of these works great
