tomato based Baby Backs, or good ole Ribs.....
Need, a smoker, about 160F, for like 12 hours or more. Minimum smoke, clean fire.
Big can (100fl oz)ish of tomato paste.
Same amount Strawberry soda. (I use the natural stuff with sugar, no corn syrup)
Two white onions, chopped finely
Handfull of chopped up garlic
one of those bigger bottles of Mustard
like 24oz of apple cider vinegar
Handful red pepper (the kind you put on pizza)
Couple handfulls Koshir or sea salt.
One of those normal sized spice containers of chili powder. (the kind that fits in your hand, 4" tall or so)
handful of minced up ginger
Four cups raw sugar, honey, molasses, maple....... you chose.
Bring to boil, and simmer for like 2 hours, after an hour, start to add red tabasco for heat, like it hot, just dump the whole bottle in.
Smoke it, and stick it right away..... I rack them and cook them for 12 or so hours, 20 is best.
dont forget to peel the skin off the backs!
