'63 Dart problem

Need suggestions re: my 1963 Dart, rebuilt 225 with a Holley 1920

Was running great, rolled up to a stop sign and it suddenly started running bad - gasping and sputtering - and died... restarted and instantly ran great, as if nothing had never happened. My mechanic confirmed the points looked a little crispy so we did a points and condenser swap + tune up, which was overdue anyway. Checked the vacuum lines and they look fine.

However now it’s still the same, runs perfectly then out of the blue it will run very rough and die, but immediately starts right back up and runs smooth.

Trying to figure why restarting “resets” whatever is causing it to momentarily go haywire before it then goes Ker-Plunk. Currently thinking the 1bb Holley is due for a rebuild, but perhaps someone smarter than me has an idea before I go down the rabbit hole...
