Hard being alone and trying to make dinner for just me. Seems like I always have leftovers and I'm not very creative with food.
That's my favorite - leftovers. Winter is great 'cause I just alternate from chicken roast to pot roast and some other dinners tossed in between for variety. The roasts get turned into soups or soup stock. I think the chicken soup in the fridge may be the last for a while. Maybe tommorow I'll freeze some.

Tonight was supposed to be salmon but didn't take it out to defrost early enough. So it was stirfry again tonight since there were boneless chicken thighs and asparegus in the fridge.
 

A neighbor offered me donut tonight. I took the least sweet one and it was fine but now my mouth feels weird. Hoping some ginger tea will wash the aftertaste away. Remind me to stick to plain Pennsylvania German donuts.

Taking stuff out of the freezer for dinner is always my biggest problem.
 
Just finished spicy red beans and rice with some hot sausage mixed in for some zip. Pretty tasty for a quick thrown together dinner.
 
Well I just got done dining on some celery with peanut butter after a solid nap. Getting ready to head to work. Gonna pull a midnight to 0700hrs shift tonight. Should be interesting as tonight is most HS graduation ceremonies. Won’t be bored that’s for sure. I eat all like those pix you boys posted and I would be sound asleep! Go Jets!
 
Our day I started early went to a baseball card show in KC for a couple hours. Rushed home to my best buddies 52-year-old niece's celebration of life gathering at his house. From there we went to our other friend's son's college BBQ with whiskey so a win. A long day, both locations were within a mile of our house, so we survived.

It's supposed to get down to the low 40's tonight. Windy too. I better bring some plants in. The wife's
M Day present might not like it.
